Our low carb fruitcake is different. It has monk fruit which replaces the regular sugar and corn syrup, almond flour, to replace the white flour (which is made from just almonds), and even though it has dried fruit in it, cranberries and cherries, the quantity does not bring the carb count up too much.
Also, a good way to make your fruitcake moist is to soak your fruit overnight in rum or brandy, which have zero carbs, before making the fruitcake. That way your sugar-free fruitcake will stay moist longer.
This is a Sugar-free Keto Fruitcake which is easy to make and delicious, all the while avoiding all those carbs and sugar you find in a regular fruitcake. Perfect on the Keto diet or just trying to eat healthier.

Orange juice: I prefer using orange juice to the traditional alcohol used in Christmas cakes, as it just makes the fruit cake that much fruitier. And if you are alcohol-free or intend on serving this cake to kids or other alcohol-free adults, it just works for a broader audience. You can swap the orange juice for another juice like apple juice or tart cherry juice, or if you prefer the more traditional approach, use rum or brandy instead.
This gluten-free Christmas cake recipe keeps stored at room temperature for up to 24 hours as is (I just recommend wrapping in foil to maintain moisture). If storing longer, feed with more orange juice every 24 hours for up to 3 days. Alternatively, this cake will keep tightly wrapped in the refrigerator for up to 5 days.
I tested various different fats while developing this vegan Christmas cake, and found that the versions made with dairy free margarine were superior in both taste and texture to those made with coconut oil or sunflower oil, so that is what I have used for this recipe.
To make a vegan version, simply swap the butter in the gingerbread for dairy free margarine or coconut oil, and follow the recipe for vegan royal icing from my Tombstone cupcakes to ice the biscuits with.
To make this vegan Christmas cake alcohol free, soak the fruit in the same quantity of orange juice. Bear in mind that if you aren't feeding it with alcohol then the cake won't keep for as long, so bake it the same week that you want to serve it.
